Mushroom are healthy to eat. They are rich in antioxidants and are a low source of calories. Mushrooms can be cooked in different styles - curries, fritters, soups, and lots more. One of my favourites is Mushroom Kadhai, which is an Indian styled Mushroom curry added with Indian spices and veggies. So do you wanna try this at your home? Mushrooms are usually loved by children as well as by adults. They are easily available in the market and add a fabulous look to your dining table.
Mushroom Kadhai, an Indian curry dish, is quick and easy to make without much requirement of ingredients. Its ingredients are the basic ones that are easily available in every Indian household.
The followings are the ingredients of Mushroom Kadhai -
Now once we have checked the ingredients of Mushroom Kadhai, let us now move to its method of cooking. The cooking method of Mushroom Kadhai is simple, easy and gets quickly prepared.
The above ingredients list is for 3-4 people.
Method of Cooking -
Take 400gms of button mushrooms and clean them properly in running water. Slit them into halves and set them to boil in a pressure cooker. Two to three whistles are good enough. Sieve out the water and let them cool.
Put Kadhai (cauldron) on a medium flame and add 2 tablespoons of cooking oil to it. Let the oil gets heated, and once it is done, add sliced onions, dry red chillies, chopped ginger and garlic to it. Saute them until the onion gets soft and change its colour.
Add chopped tomatoes, garlic, cloves, and cinnamon stick. Saute them well on a medium flame.
Once all the above ingredients seem to be cooked and get tender, put off the flame. And take them out in a bowl; let them cool.
As the previously sauteed ingredients are getting cool, meanwhile, swallow fry the capsicum and boiled mushrooms. Swallow fry them until they get soft and tender. Once done, take them out on a plate and keep them aside.
Now take the sauteed ingredients and put them in a grinding jar. Grind them into a fine paste. Make sure they are cooled enough, otherwise while grinding, they may spill out of the jar.
Once again put kadhai (cauldron) into medium flame and add 2 tablespoons of cooking oil. Once the oil gets heated, add that paste to it. Stir it well.
Now it's time to add dry spices. Add salt, turmeric powder. coriander powder, red chilli powder, and garam masala powder to it. Keep stirring it well for 2 - 3 minutes.
Add water so that the masala does not get completely dry. Once the flavoured aroma starts coming, add fried mushrooms and capsicum cubes to it. Mix them well. And put the lid.
After few minutes, once the oil starts leaving, add water to give a fine consistency to the curry. Put the lid again and cook further for 2 to 3 minutes.
Now it is all done. You may add chopped coriander leaves for garnishing.
Your Mushroom Kadhai is ready to be served. You can enjoy this tasty Mushroom Kadhai curry with Naan or simple Chapati (Indian Bread). This becomes a great menu for Indian dinner.
